Happy Sunday, everyone! It's the start of a new month, and I'm excited to get in the kitchen and do some cooking before spring break, which I cannot believe is right around the corner! Scroll down to see what I'll be concocting this week; there's some old favorites and new recipes I'm eager to try.
SUNDAY: Kale Rice Bowl from Food & Wine
My cousin has been staying with us from Ohio, so I don't anticipate squeezing in a Sunday grocery store run. Fortunately, we still have all the fixings from the kale rice bowl I made for the shop BURU dinner we hosted at my house last Thursday, and it's so good, I'm going to whip it up again for my fam! Total recipe repeater and not ashamed of it!

MONDAY: Rodeo Night
We're kicking the week off at The Rodeo, so dinner will consist of some kind of fried food and definitely be topped off with funnel cake -- what's your favorite fair indulgence?

TUESDAY: Lemony Pan-Roasted Chicken Thighs with Carrots from goop
I always associate lemons and limes with the heat of summer, but turns out they're peaking right about now at the tail end of winter. Cue this lemony chicken recipe -- it caught my eye as a super satisfying, well-balanced mid-week kind of meal.

WEDNESDAY: Salmon with Sesame and Herbs by Alison Roman
This is an old stand-by. This salmon, doused in Asian flavor, goes so well with some brown rice, avocado and any good green veggie.

THURSDAY: Lasagna Stuffed Zucchini Boats by The Modern Proper
It's been awhile since Italian has been on our menu, so I'm turning to these lasagna stuffed zucchini boats. Lasagna, with all its layers, is a labor of love, so this is a much quicker (and healthier!) alternative, but still delicious with lots of cheese. I'm thinking the kids and hubs will deem this a winner.
We're off to Ohio on Friday to see more of my fam, and I can't wait to be back in my old stomping grounds. Wishing everyone a wonderful Sunday and week ahead!
